12 Cabbage Dinner Ideas Beyond Coleslaw

Cabbage is a seriously underrated vegetable in North America — long-associated with poverty, it has suffered a poor reputation. However, in much of Europe, Asia, and Africa, it gets the love it deserves, and here are 12 ideas for cabbage dinners.

1. Corned Beef and Cabbage

Corned Beef and Cabbage on a plate

Corned beef and cabbage isn't just for St. Patrick's Day. This recipe is pretty massive, but it can easily be scaled back, although I'd probably use a little more cabbage.

2. Cabbage Noodles

Cabbage noodles

In Japan, noodle dishes are often served with plenty of cabbage, the thin strips seamlessly integrating with the noodles. This recipe leans more European in character, but follows the same basic formula.

Braised cabbage with minced meat

This is a simple, wallet-friendly stew with enough flavor that you don't feel like you're missing out. I'd avoid canned tomato sauce, though — just use a second can of diced tomatoes.

4. Chicken and Rice Stuffed Cabbage Rolls

Eastern European cabbage rolls traditionally use pork or beef, but you can use chicken too. I would, again, avoid using canned tomato sauce, so for a more authentic flavor, use two cans of tomatoes and toss in a little more minced garlic.

Sauerkraut is for more than just a bratwurst at the stadium, but as is well known, it goes great with any kind of cured meat. These pork chops are stuffed with kraut and bacon, seasoning the chops from the inside out.

10. Cabbage, Beef, Rice and Cheese Casserole

Cabbage, Beef, Rice and Cheese Casserole on a plate

"Yoshoku," or Japanese-style Western food, is endlessly interesting, and one of its star dishes is beef doria: ground beef, tomato sauce, and cheese over rice. This is essentially a doria, and again, I strongly recommend replacing the canned sauce with another can of tomatoes.

11. Coconut Curry Soup with Cabbage and Pumpkin

Coconut curry soup with cabbage and pumpkin

This isn't a Thai curry, but its source of inspiration is very much Thai. For the pumpkin, if you use a kabocha, as they would in Thailand, you don't even need to peel it, as the peel is edible.

12. Pork, Egg and Bok Choy Ramen

Pork, Egg and Bok Choy Ramen on a plate

All over Asia, instant noodles are a popular hack for weeknight cooking. This is a much-simplified miso ramen, and it's infinitely better than whatever's going on inside the seasoning packet.
