Mediterranean Tuna Salad Sandwich

Mash a few white beans into the lemon-and-mustard dressing before folding in the tuna, so the filling holds together without mayonnaise. Leave the remaining beans whole and the fish in small flakes. Capers bring enough sharpness that the sandwich does not need wet pickle slices tucked against the bread. Use a ciabatta roll with a firm but chewable crust and put dry arugula underneath the salad. A short chill lets the dressing settle into the beans, giving you a cold sandwich that still has recognizable tuna and a little green parsley through the filling.

Ingredients
  

  • 2 cans 5 oz each tuna packed in olive oil, drained
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 2 tsp capers drained and finely chopped
  • 2 tbsp finely chopped fresh flat-leaf parsley
  • 1/4 tsp black pepper
  • 4 small ciabatta rolls about 3 oz each, split
  • 1 cup baby arugula washed and thoroughly dried

Method
 

  1. Whisk olive oil, lemon juice, Dijon, chopped capers and pepper in a bowl. Add 1/3 cup of the drained beans and mash them into the dressing with a fork.
  2. Flake drained tuna gently, then fold it into the mashed-bean dressing with remaining whole beans and parsley. Keep some fish flakes intact.
  3. Cover and refrigerate for 20 minutes until cold; this chilling time is included in prep time.
  4. Divide arugula among the ciabatta bottoms and spoon the tuna salad evenly over it. Close with the roll tops and cut each sandwich across the middle.
  5. Serve cold or refrigerate at 40°F or below, using ice packs when taking the sandwiches away from home.
