Pavlova with a Soft Center, Strawberries and Pomegranate

Today I am making pavlova, one of my favorite desserts. It’s light, creamy, full of fresh fruit, and it always looks so beautiful. Everyone at home loves this one.

Pavlova with Fresh Strawberries and Pomegranate

A light, creamy pavlova with a crisp outside and soft center, piled high with whipped cream and fresh fruit.

Ingredients
  

  • 4 egg whites
  • 1 cup sugar added gradually
  • 2 tsp cornstarch
  • 1 tsp vanilla
  • 1 tsp vinegar
  • 1 cup* whipped cream for topping
  • 1 cup* fresh strawberries sliced, for topping
  • 1/4 cup* pomegranate seeds for topping
  • 2 tbsp* berry sauce for drizzling
  • 1 tbsp* powdered sugar for dusting

Method
 

  1. I start with 4 egg whites and beat them until they are light and foamy.
  2. Then I slowly add one cup of sugar, a little at a time, and keep beating until the mixture is thick and glossy, smooth, and holds its shape really well.
  3. Once it looks like this, I add 2 teaspoons of cornstarch and gently fold that in until it’s well combined.
  4. Then I add 1 teaspoon of vanilla followed by 1 teaspoon of vinegar and gently fold everything together one last time.
  5. Then I put it on a baking sheet and make a round shape, leaving a little room in the middle for the toppings.
  6. I bake it long and slow until the outside is dry and crisp, then I let it cool completely.
  7. Once it’s cooled, I add a generous layer of whipped cream.
  8. Then comes fresh strawberries, pomegranate, and plenty of fruit on top.
  9. It is time to add a little berry sauce and finish it with powdered sugar.

This is exactly the texture I am looking for. Once it looks like this, I add 2 teaspoons of cornstarch, and I gently fold that in until it’s well combined. Then I add 1 teaspoon of vanilla followed by 1 teaspoon of vinegar, and I gently fold everything together one last time.
