The Magic of Señor Sisig

Señor Sisig is the brainchild of high school buddies Evan Cadera and Chef Gil Payumo, who set out in 2010 to blend Mexican street food with the Filipino dish sisig, traditionally made from pork head and cheeks. “Originally, it’s with the pork head cheeks. Now we do a little cleaner version with a pork shoulder,” says Chef Gil. This dynamic duo has created something special, drawing crowds all over San Francisco who happily track the truck’s whereabouts via their website.

Preparing the Pork Sisig

The signature dish at Señor Sisig is the Pork Sisig Tacos. Chef Gil starts by explaining the meticulous process of preparing this flavorful dish. It all begins with slicing pork shoulder into quarter-inch thin pieces. The pork is then marinated overnight in a mix of soy sauce, sugar cane vinegar, pineapple juice (for a hint of sweetness), minced garlic, bay leaves, white sugar, black pepper, and salt.

After marinating, the pork is charbroiled to infuse it with a rich, smoky flavor. Once the initial marinade is complete, Chef Gil creates a secondary marinade with soy sauce, lemon juice, red chili flakes, and black pepper. “Now that’s gonna go to the flat top,” Gil shares, where the pork is reheated and further cooked to perfection.

Building the Perfect Taco

The next step is assembling the tacos. Corn tortillas are warmed on the grill, and the charbroiled pork sisig is placed atop them. The tacos are then brought to the “cold table” for finishing touches. Diced onions, jalapenos, a mix of iceberg lettuce and cabbage, cilantro cream sauce, and a sprinkle of jalapenos complete the dish. A squeeze of lime adds a final zesty kick. “That’s all she wrote,” Guy remarks, as the delectable creation reaches its final form.
