This is my go-to recipe for when I know I’ll have a busy day, so I need a calorie and protein boost, but I’m not going to have time in the morning to cook. This overnight recipe is also perfect for meal prepping and for those busy weeks where cooking is really the last thing you want to do.
Ingredients for 2 servings:
- 300 g silken tofu;
- 15g cocoa powder;
- 4 dates;
- 10g maple syrup;
- Pinch of salt and cinnamon.
Topping: You can actually use everything you prefer. I prefer using berries because they are full of antioxidants and vitamin C, and nuts for the healthy boost of fats and energy in the morning, but you can choose whatever you want.
Time needed: 10 min+overnight rest.

This is as easy as it looks: blend all the ingredients together until you reach a mousse consistency. This recipe works amazingly just this way, placing the mousse into a jar or a bowl with a lid and letting it rest for the night; in the morning, just put ontop the topping you prefer, you could even eat it is or use it as a substitute of your yogurt.
That said, I have an important nutritional addition: if you have the opportunity, I suggest adding 10g of ground chia seeds and 30g of soy milk (or the milk you prefer) per serving in the blending. The chia seeds will give an amazing pudding consistency and will help your gut keep your insulin level stable for the whole day. If you’ve never used chia seeds, just try it for one week and see what happens.
If you don’t want to, just stick to the previous version and enjoy!
