This first-generation spot measures just 800 square feet, but brothers George and Tony Manos have been running this grill for 24 years straight—and they still won’t let anyone else touch it. Their dad spotted a small “for sale” sign while driving by one day and told his teenage sons he’d found them a great spot. Nearly a quarter century later, they’re still there, still cooking, still hearing zero complaints.
The Cheddar Burger: Well Done But Juicy

They start with a third-pound patty, fresh never frozen, and char-grill it on a flat top running at about 750 degrees. The goal? A nice little crust on the outside while keeping it juicy inside. “Well done but juicy—that’s what it’s all about right here,” one of the brothers explained.
The bun gets grilled too. Then comes the soft Wisconsin cheddar layered on top of the bun, followed by pickles, lettuce, tomato, and what Guy called “molten hot onions.” When asked if they provide bibs, the answer was simple: “No bibs, man.”
Guy’s reaction said it all. After one bite, he asked if they had a shower. “We’ll hose you down in the back,” they offered. He noted the really strong cheddar paired with really strong beef, the char-grilled taste coming through, and the perfect onion placement on top.
More Than Just Burgers
While the Cheddar Burger takes center stage, Paradise Pup serves up traditional Chicago fast food the way it ought to be. The menu includes Polish sausage, totally loaded Chicago Dogs, and homemade Italian beef. One regular customer who’d been coming for almost 20 years rattled off his favorites: “The cheddar polish is great, the Italian beef is great, the cheddar burger is still…” He couldn’t even finish the sentence. He also admitted to knowing the menu by heart—and eating there twice a day. His order? Cheddar burger and cheese fries.
That kind of loyalty isn’t unusual here. The line outside on this particular day wasn’t because it was Saturday—”this is every day,” according to the waiting customers. Similar to how Guy called a “BANANAS” Whole Fried Chicken in Memphis absolutely wild, he used the same word for Paradise Pup: “This is bananas.” And in this case, bananas is good.

What sets Paradise Pup apart isn’t fancy technique—it’s heart. “When they leave, I want people to feel like they’ve been to someone’s backyard barbecue,” the owners explained. That’s their mission: fast food that tastes like home cooking, served from a shoebox-sized spot with a line out the door.
