The Hulk: Fried Lobster and Buttermilk Waffles

The star of this segment is The Hulk — fresh fried lobster served on a house-made buttermilk waffle. The Seafood Lady walked Guy through every step of this beast.

For the waffles, she keeps the batter thick on purpose: flour, baking powder, sugar, salt, a little oil, two eggs, vanilla, and milk. “I like it a little thick so I can get a really fluffy waffle,” she explained.

The dry batter for the lobster and shrimp is where grandpa’s secrets come in. Yellow cornmeal, flour, onion powder, granulated garlic, cayenne pepper, paprika, adobo, black pepper, sea salt, and thyme — “gotta have the thyme,” she insisted. The whole lobster tail gets battered and deep-fried in the shell, old-school dinner house style.
