Cooking time: approximately 2 hours
Ingredients
- 2 tbsp olive oil,
- divided: 800 g bone-in chicken leg pieces
- 200 g potato, diced
- 400 ml full-fat coconut cream
- 135 g crushed tomatoes 1⅓ cups
- 330 ml chicken stock or broth
- 1 large onion, finely chopped
- 6–7 cloves garlic, minced; 1 tbsp + 1 tsp fresh ginger, minced
- 2–3 red chilies, sliced (adjust to taste)
- 1 tbsp + 1 tsp garam masala
- 1⅓ tsp ground turmeric
- 1 cinnamon stick (about 5 cm)
- 5–6 green cardamom pods
- 1⅓ tsp fennel seeds
- 1–2 limes, zest and juice (to taste)
- To taste, salt and black pepper
- As needed fresh coriander (cilantro), to garnish
Method
- Heat 1⅓ tbsp olive oil in a large frying pan over medium-high heat. Season the chicken with salt and black pepper. Sear in a single layer for 3–4 minutes per side until golden brown, working in batches if needed. Transfer to the slow cooker.
- Add the remaining ⅔ tbsp olive oil to the pan and reduce to medium heat. Sauté the onion and garlic for about 2 minutes. Add the ginger, chilies, garam masala, cardamom pods, and fennel seeds. Cook over low heat for 1 minute, stirring, until fragrant.
- Add the sautéed onion and spice mixture to the slow cooker along with the potato, turmeric, cinnamon stick, coconut cream, crushed tomatoes, and chicken stock. Stir gently to combine and season with salt and black pepper.
- Cover and cook on LOW for approximately 2 hours, or until the chicken is fully cooked and tender and the potatoes are soft. Check that the thickest part of the chicken reaches at least 74°C; cooking time will vary with the slow cooker and size of the pieces.
- Stir through the lime zest and juice. Taste and adjust the seasoning.
Serve over steamed white rice, garnished with fresh coriander. Note: Rice is a serving suggestion and is not included in the ingredient quantities. Remove the whole cinnamon stick and cardamom pods before eating.
