Chicken Crepioca

A quick and easy chicken crepioca with a crispy cheese crust, filled with shredded chicken, tomato, and corn.

Ingredients

  • 1 spoonful tapioca starch
  • 1 egg
  • shredded chicken for filling
  • tomato for filling
  • corn for filling
  • 1 slice cheese

Method

  1. Mix the tapioca starch with the egg to create a batter.
  2. Pour the mixture into a frying pan and let it cook until one side is nicely set.
  3. Add the slice of cheese to the uncooked side, then flip it over so the cheese gets crispy on the outside.
  4. Add the shredded chicken, tomato, and corn.
  5. Fold the pancake, place it on a plate, and serve.
  • shredded chicken
  • tomato
  • corn
  • and a slice of cheese
A folded pancake with melted cheese sits in the frying pan just before being flipped.

I mix 1 spoonful of tapioca starch with the egg to create a pancake-like batter, but you can use any kind of batter you like for your recipe.

Cooking the Crepioca

Pour the mixture into a frying pan and let it cook until one side is nicely set. Before flipping it, I add the slice of cheese so it gets crispy on the outside of our pancake. Then I flip it over and add all the filling ingredients.

I love this recipe because it’s super quick and easy to make.

Serving the Crepioca

Fold your pancake, place it on a plate, and it’s ready to eat. It’s delicious for breakfast or an afternoon snack. I hope you guys enjoy it!
