They Melt In Your Mouth!’ – Guy Fieri Raves About These Short Ribs With a Secret Ingredient

In this episode of Diners, Drive-Ins and Dives, Guy Fieri takes us on a culinary adventure to The Front Porch, a cozy eatery nestled in San Francisco’s bustling Mission District. Known for its welcoming atmosphere and hearty, flavorful dishes, The Porch doesn’t disappoint with its standout feature: Dr. Pepper Short Ribs. Whether it’s the rocking chairs or the rocking food, this place is a must-visit for anyone serious about good eats.

The Star of the Show: Dr. Pepper Short Ribs

Guy starts by meeting the chef, who is ready to showcase the process of creating their signature Dr. Pepper Short Ribs. The boneless beef short ribs are seasoned generously with salt and freshly ground black pepper. Next, they are seared in a hot sauté pan with canola oil until they achieve a perfect crust.

“Seriously, that’s a good pun,” Guy says as the chef chuckles, emphasizing the playful atmosphere in the kitchen.

The Braise

Once the ribs are beautifully seared, they are transferred into a hotel pan. The foundation of flavors for the braise includes a rough chop of carrot, celery, and onion, known as mirepoix, along with fresh thyme and bay leaves. Adding a bit of heat and smokiness, chipotle peppers in adobo sauce and homemade chicken stock join the mix. Finally, the star ingredient, a hefty amount of Dr. Pepper, is poured in, giving the dish its unique and tantalizing flavor profile.

“We don’t call it Dr. Pepper Short Ribs for nothing,” Guy exclaims, highlighting the dish’s distinctive twist.

The whole mix is then placed in the oven to braise at 350 degrees for four hours.

Plating the Perfection

Fast forward to plating, and the ribs are ready to be served. As they are laid out, the chef seasons them with a bit more black pepper and kosher salt. He then adds a touch of butter to the braising liquid to thicken and enrich it even further.

“A little butter, yeah, it’s gonna help it thicken up as if it’s not already rich enough,” Guy remarks with a grin, appreciating the attention to detail.

To assemble the dish, a generous spoonful of celery root puree is placed on the plate, followed by sautéed mustard greens. The succulent short rib is then added on top, and the rich Dr. Pepper braise is poured over. The final touch is a sprinkle of freshly grated horseradish, which adds a bright contrast to the deep, savory flavors.

Guy’s Take

As Guy digs in, he can’t help but be impressed. “The short rib is so tender that it’s just falling apart,” he notes, using his fork to demonstrate its tenderness. The celery root puree serves as a delightful medium, while the mustard greens and fresh horseradish add layers of flavors and textures. The reduced braising liquid, infused with the round sweetness of Dr. Pepper, ties everything together perfectly.
