Whipped Cinnamon-Honey Butter

The bread basket only makes sense with a soft bowl of cinnamon-honey butter beside it. This version stays balanced: enough confectioners' sugar to whip fluffy, enough salt to stop it tasting like frosting. Use genuinely soft butter or the mixture will stay pebbly.

Ingredients
  

  • 1/2 cup unsalted butter softened to 68°F
  • 3 tbsp confectioners' sugar
  • 2 tbsp mild honey
  • 3/4 tsp ground cinnamon
  • 1/8 tsp fine salt

Method
 

  1. Beat the softened butter with an electric mixer on medium speed for 2 minutes until pale and loose.
  2. Sift in the confectioners' sugar so no hard lumps remain in the bowl.
  3. Add the honey, cinnamon and salt, then beat on low speed until the sugar disappears.
  4. Increase to medium-high and whip for 2 minutes until the butter looks airy and holds soft ridges.
  5. Spoon the butter into one small serving bowl and serve immediately, or refrigerate it covered for up to 5 days and soften it for 20 minutes before serving.
