Waffle House-Style Scattered Hash Browns

Wide, thin coverage is how you get more crisp potato than soft center. Wring the shreds dry and leave them alone once they hit the griddle, since flipping too early turns a coherent sheet into pale loose threads.

Ingredients
  

  • 2 lbs russet potatoes peeled
  • 2 tbsp neutral oil
  • 2 tbsp unsalted butter
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Shred the potatoes on a box grater and rinse them in cold water until the water is mostly clear.
  2. Wrap the shreds in a clean towel and twist firmly until they feel dry and loose.
  3. Heat the oil and butter across a large griddle over medium-high heat and scatter the potatoes into 4 thin portions.
  4. Season with the salt and pepper and cook without moving for 6 to 8 minutes until a deep brown crust forms underneath.
  5. Flip each portion in sections and cook for 5 to 7 minutes until the second side is crisp and the centers are tender.
