Velvety Flat White

The flat white uses less milk than a latte and finer, wetter microfoam, so its coffee flavor stays forward. Two concentrated shots meet a modest pour of whole milk. Keep the frother near the bottom after the first few seconds; large airy bubbles make the drink read as cappuccino instead of flat white.

Ingredients
  

  • 2 ristretto-style espresso shots or 1/4 cup very strong coffee
  • 1/2 cup whole milk

Method
 

  1. Brew the concentrated coffee into an 8-ounce cup.
  2. Heat the milk to about 145°F in a small pitcher or saucepan.
  3. Aerate the surface for 3 seconds, then keep the frother submerged until the milk looks glossy with tiny bubbles.
  4. Tap and swirl the milk vessel to remove any large bubbles.
  5. Pour in a steady thin stream so only a shallow layer of microfoam sits on the drink.
