Turkey Cranberry Brie Sandwich

Fresh cranberry-orange sauce gives roast turkey and Brie a sharper filling than a thick blanket of sweet cranberry jelly. Cook the small batch until the berries burst, then let it settle while the turkey warms and the baguette gets a short oven finish. The Brie belongs in thin slices so it softens before the bread's crust becomes hard. Add arugula after heating, where its peppery leaves can stay fresh against the warm filling instead of wilting into the sauce. This is a baguette sandwich with a warm center, so keep the turkey in thin slices and the berry layer modest enough that the first bite doesn't squeeze it all out.

Ingredients
  

  • 2 pieces baguette about 6 inches each, split
  • 3/4 cup fresh or frozen cranberries
  • 1 tbsp granulated sugar
  • 2 tbsp orange juice
  • 1 tbsp water for cranberry sauce
  • 8 oz leftover roast turkey skin removed and thinly sliced
  • 2 tbsp low-sodium turkey broth
  • 3 oz Brie thinly sliced
  • 1/2 cup arugula washed and dried

Method
 

  1. Combine cranberries, sugar, orange juice and sauce water in a small saucepan. Simmer for 8 to 10 minutes, stirring, until berries burst and sauce thickens; remove from heat and cool for 3 minutes.
  2. Heat the oven to 375°F. Warm turkey with broth in a covered skillet over low heat for 5 to 8 minutes until the meat reaches 165°F, then drain excess loose liquid.
  3. Place baguette bottoms on a rimmed sheet, spread with cranberry sauce and layer on warm turkey and Brie. Set tops beside them cut-side up.
  4. Bake for 5 to 7 minutes until Brie softens and bread is lightly crisp, removing plain tops early if they darken.
  5. Add arugula over the warm filling, close with the tops and cut each sandwich in half before serving.
