Turkey Cranberry Brie Melt

Cranberry sauce works here when it's treated like a sharp condiment, not a half-inch layer of dessert. Brie and turkey warm between multigrain bread while a few spinach leaves keep the filling from sliding. Low heat is the difference between melted cheese and burned seeds.

Ingredients
  

  • 8 slices multigrain bread
  • 12 oz sliced fully cooked turkey breast
  • 6 oz Brie cheese thinly sliced
  • 1/3 cup whole-berry cranberry sauce
  • 1 cup baby spinach
  • 3 tbsp unsalted butter softened

Method
 

  1. Spread cranberry sauce over 4 bread slices and divide the Brie evenly over the other 4 slices.
  2. Layer the turkey and spinach over the cranberry sauce and close the sandwiches with the Brie-topped bread.
  3. Butter the outside of each sandwich from edge to edge.
  4. Cook in a covered skillet over medium-low heat for 4 minutes on the first side.
  5. Turn and cook for 4 to 5 minutes until the bread is crisp, the Brie is soft and the turkey in the center reaches 165°F.
  6. Rest for 2 minutes and cut each melt diagonally.
