Turkey Avocado Wrap

Avocado makes a soft spread for deli turkey, while shredded cabbage and carrot give the wrap enough crunch without bacon or another layer of cheese. Keep the filling below the tortilla's halfway line, fold the sides inward and roll firmly so the cut ends show a compact spiral instead of loose vegetables falling onto the plate.

Ingredients
  

  • 2 large 10-inch whole-wheat flour tortillas
  • 8 oz thinly sliced ready-to-eat deli turkey
  • 1 ripe avocado peeled and pitted
  • 2 tsp fresh lime juice
  • 1/4 tsp fine salt
  • 1/2 cup finely shredded red cabbage
  • 1/2 cup finely shredded carrot

Method
 

  1. Mash avocado with lime juice and salt until spreadable, leaving a few small pieces for texture.
  2. Spread half the avocado over each tortilla, leaving a 1-inch border around the edges.
  3. Lay turkey in an even strip below the center of each tortilla and divide cabbage and carrot over the meat.
  4. Fold the side edges inward, bring the lower edge over the filling and roll tightly away from you, keeping the sides tucked in.
  5. Rest seam-side down for 1 minute, cut each wrap diagonally across the middle and serve.
