Turkey Avocado Club

Avocado replaces some of the mayonnaise in this turkey club but does not replace the bacon or the middle toast. Lemon keeps the mash green and gives the rich sandwich a little acid. Put avocado beside turkey, not against tomato, so the center layer has enough friction to stay stacked.

Ingredients
  

  • 6 slices whole-wheat sandwich bread
  • 1 ripe avocado
  • 1 tbsp lemon juice
  • 1/2 tsp kosher salt
  • 4 tbsp mayonnaise
  • 8 oz very thinly sliced roasted turkey
  • 6 strips bacon cooked crisp
  • 4 lettuce leaves dried
  • 1 ripe tomato thinly sliced

Method
 

  1. Toast the bread and mash the avocado with lemon juice and salt.
  2. Spread avocado over two toast slices and top with folded turkey and lettuce.
  3. Spread mayonnaise on both sides of two middle toast slices and set them over the turkey.
  4. Add bacon and tomato, then close with the remaining toast spread lightly with mayonnaise on the inside.
  5. Secure with four toothpicks, cut each sandwich into quarters and serve.
