Trader Joe's-Inspired Hatch Chile Mac

Roasted Hatch chiles and a blend of cheddar, Monterey Jack and Gouda distinguish this frozen-tray-inspired mac. The chiles are drained and chopped so green pieces remain visible without thinning the sauce. A brief bake sets the square-dish edges while the center stays creamy.

Ingredients
  

  • 1 lb elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 1/2 cups shredded sharp cheddar
  • 1 1/2 cups shredded Monterey Jack
  • 1 cup shredded Gouda
  • 1 cup roasted Hatch chiles drained and chopped
  • 1 tsp kosher salt

Method
 

  1. Heat the oven to 375°F and boil macaroni 2 minutes short of tender; drain.
  2. Melt butter, whisk in flour for 1 minute and gradually add milk; simmer until lightly thickened.
  3. Remove from heat and melt in cheddar, Monterey Jack, Gouda and salt.
  4. Fold in macaroni and drained Hatch chiles and spread in a buttered baking dish.
  5. Bake for 20 to 24 minutes until bubbling and lightly browned at the edges.
