Three-Cheese Grilled Cheese

American supplies reliable melt, cheddar supplies tang and provolone supplies stretch. Thin slices allow the trio to warm together without an oily middle. White sandwich bread keeps the proportions diner-simple, and a covered skillet for the final minute helps the center finish before the crust gets too dark.
