Texas Roadhouse-Style Soft Honey Rolls

These rolls should pull apart in feathery layers, not crumble like biscuits. The dough is deliberately soft, so resist burying it under extra flour. Let the second rise make them visibly puffy before the pan goes into the oven.

Ingredients
  

  • 3/4 cup whole milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup honey
  • 1 large egg
  • 4 tbsp melted unsalted butter
  • 3 cups bread flour
  • 1 tsp kosher salt
  • 1 tbsp softened butter

Method
 

  1. Warm the milk to 105°F, stir in the yeast and 1 tablespoon honey, and wait 7 minutes until a foamy cap forms.
  2. Mix in the remaining honey, egg and melted butter, then knead in the flour and salt for 8 minutes until the dough is smooth and tacky.
  3. Cover the dough and let it rise for 60 to 75 minutes until doubled.
  4. Divide the dough into 12 pieces, shape them into compact squares in a greased pan, and rise for 35 minutes until puffy and touching.
  5. Bake at 375°F for 16 to 18 minutes until evenly golden, then brush immediately with the softened butter.
