Tater Tot Hotdish

Hotdish needs a tidy blanket of crisp potatoes and enough gravy underneath to hold the beef together. Don't bury the tots. Don't crowd them sideways. Their exposed tops need to crisp. That's how an ordinary freezer supper becomes the pan everybody picks clean.

Ingredients
  

  • 1 1/2 lbs 85% lean ground beef
  • 1 medium yellow onion chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 cans 10 1/2 oz each condensed cream of mushroom soup
  • 1/2 cup whole milk
  • 2 cups frozen cut green beans thawed
  • 1 cup frozen corn thawed
  • 32 oz frozen potato tots

Method
 

  1. Heat the oven to 375°F and grease a 9-by-13-inch baking dish.
  2. Brown the beef and onion in a large skillet over medium-high heat for 8 to 10 minutes, breaking up the meat, until the beef reaches 160°F, then drain the fat.
  3. Season the beef with the salt and pepper and spread it across the baking dish.
  4. Whisk the soup and milk until smooth, fold in the green beans and corn, and spoon the mixture over the beef.
  5. Arrange the frozen potato tots in one close, even layer over the filling.
  6. Bake uncovered for 40 to 45 minutes, until the filling bubbles at the center and the tots are crisp and dark golden, then rest for 5 minutes.
