Sweet Potato Quinoa Burger with Green Goddess Sauce

Sweet potato needs quinoa and oats around it or the patty turns into mash between bread. Chill the shaped burgers before cooking and flip only once. The parsley-scallion green goddess sauce is sharp enough to check the sweetness.

Ingredients
  

  • 1 medium sweet potato peeled and cut into 1-inch cubes
  • 1 cup cooked quinoa cooled
  • 1/2 cup quick-cooking oats
  • 1 large egg beaten
  • 1 tsp smoked paprika
  • 3/4 tsp kosher salt
  • 1/2 cup mayonnaise
  • 1/2 cup packed fresh parsley leaves
  • 2 scallions chopped
  • 1 tbsp lemon juice
  • 1 tsp capers drained
  • 4 brioche hamburger buns
  • 4 leaves butter lettuce

Method
 

  1. Steam the sweet potato cubes for 10 to 12 minutes until tender, then spread them on a plate to cool and release steam.
  2. Mash the sweet potato coarsely and mix it with the quinoa, oats, egg, smoked paprika and salt.
  3. Shape 4 compact patties and refrigerate them for 15 minutes until firm.
  4. Blend the mayonnaise, parsley, scallions, lemon juice and capers until flecked green but not completely smooth.
  5. Cook the patties in a lightly oiled nonstick skillet over medium heat for 5 to 6 minutes per side, flipping once, until browned and set.
  6. Rest the patties for 3 minutes and toast the buns cut-side down.
  7. Spread green goddess sauce over each bun and add lettuce and one sweet potato quinoa patty.
