Sweet-and-Sour Kielbasa Bites

Smoked kielbasa takes on a glossy sweet-and-sour sauce without losing its snap. Pineapple juice provides the fruit note, but the chunks are kept small enough to share a toothpick with sausage. Browning the cut sides first is optional, though it makes this simple appetizer look and taste less boiled.

Ingredients
  

  • 2 1/2 lb smoked kielbasa cut in 1-inch pieces
  • 1 can 20 oz pineapple chunks in juice
  • 3/4 cup ketchup
  • 1/2 cup packed brown sugar
  • 1/3 cup rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Method
 

  1. Drain the pineapple, reserving 3/4 cup juice, and cut large chunks in half.
  2. Add the kielbasa and pineapple to a 4-quart slow cooker.
  3. Whisk the reserved juice, ketchup, brown sugar, vinegar and soy sauce, pour over the sausage and cover.
  4. Cook on high for 2 to 2 1/2 hours or low for 4 hours.
  5. Stir together the cornstarch and cold water, add it to the cooker and cook on high uncovered for 10 minutes before switching to warm.
