Stouffer's-Inspired Classic Frozen Mac

Evaporated milk, American cheese and sharp cheddar produce the dense uniform sauce associated with a Stouffer's-inspired frozen tray. A short oven bake gives darker edges without a separate crumb top. The elbows are cooked tender, and the sauce remains plentiful enough to survive cooling and reheating.

Ingredients
  

  • 1 lb elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cans 12 oz each evaporated milk
  • 8 oz American cheese chopped
  • 12 oz sharp cheddar shredded and divided
  • 1 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Heat the oven to 375°F and boil macaroni until tender; drain.
  2. Melt butter, whisk in flour for 1 minute and gradually add evaporated milk.
  3. Simmer gently until thickened, remove from heat and melt in American cheese and 8 ounces cheddar; season with salt and pepper.
  4. Fold in macaroni and spread in a buttered baking dish, then top with remaining cheddar.
  5. Bake for 20 to 25 minutes until the edges are darkened and the center bubbles.
