Starbucks-Style Pumpkin Spice Latte

Real pumpkin gives the drink body. More is not better; too much makes the last sip gritty. Bloom the spices in the warm milk and strain if you want a cleaner cup. Strong coffee works when an espresso machine does not live on your counter.

Ingredients
  

  • 2 cups whole milk
  • 2 tbsp pumpkin puree
  • 2 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 4 oz brewed espresso

Method
 

  1. Whisk the milk, pumpkin, maple syrup, cinnamon, ginger and nutmeg in a saucepan over medium heat.
  2. Cook for 4 to 5 minutes until steaming and completely blended, but do not let the milk boil.
  3. Remove the pan from the heat, stir in the vanilla, and froth with a whisk or handheld frother for 30 seconds.
  4. Divide the espresso between 2 mugs and pour the pumpkin milk over it.
  5. Let the drinks stand for 1 minute so the foam settles into an even cap.
