Southern Pimento Cheese Sandwich

Pimento cheese should taste like cheddar first, with peppers and cayenne behind it. Grate the cheese yourself so the spread stays textured instead of pasty. This one is served cold on soft bread, the lunch-counter way, with no lettuce required.

Ingredients
  

  • 8 slices soft white sandwich bread
  • 8 oz extra-sharp cheddar cheese coarsely grated
  • 4 oz cream cheese softened
  • 1/3 cup mayonnaise
  • 1 jar 4 oz diced pimentos, drained
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp coarse black pepper

Method
 

  1. Beat the cream cheese and mayonnaise with a spoon until smooth.
  2. Fold in the cheddar, pimentos, garlic powder, cayenne and black pepper, keeping visible shreds of cheese.
  3. Chill the pimento cheese for 20 minutes so it firms enough to spread thickly.
  4. Divide the spread among 4 bread slices, taking it almost to the edges.
  5. Close with the remaining bread and press only lightly with a flat palm.
  6. Cut each sandwich diagonally and serve cold.
