Smoky BBQ Cheddar Grilled Chicken Sandwiches

Sweet barbecue sauce burns fast, so it goes on near the end instead of serving as the marinade. Smoked paprika seasons the meat itself, and sharp cheddar melts into the last coat of sauce. The onion is grilled beside the chicken until soft enough to stay put when you take a bite.

Ingredients
  

  • 4 boneless skinless chicken breast cutlets about 5 oz each
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 large red onion cut into 4 thick rings
  • 1/2 cup barbecue sauce
  • 4 slices sharp cheddar cheese
  • 4 pretzel buns split

Method
 

  1. Rub the chicken with olive oil, paprika, salt and black pepper and let it stand for 15 minutes.
  2. Divide the barbecue sauce between a 1/4-cup bowl for brushing and a separate 1/4-cup bowl for the finished sandwiches.
  3. Heat a grill or grill pan to medium-high and brush the onion rings lightly with oil from the seasoned chicken bowl.
  4. Grill the chicken and onion for 4 minutes, turn both and cook for 3 minutes more.
  5. Brush the chicken with barbecue sauce, cook for 1 minute, turn and brush again.
  6. Top each cutlet with cheddar, cover the grill and cook for 1 to 2 minutes, until the cheese melts and the chicken reaches 165°F; remove the onion when tender and browned.
  7. Rest the chicken for 4 minutes, toast the pretzel buns and assemble each with 1 cheesy cutlet, 1 tablespoon reserved clean barbecue sauce and 1 grilled onion ring.
