Slow-Simmered Green Beans with Bacon

These aren't crisp restaurant green beans, and that is the point. They cook until fully tender in bacon, onion and a small amount of broth. The beans should bend before they break but still look like beans, so start checking before the liquid is completely gone.

Ingredients
  

  • 6 oz bacon cut into 1/2-inch pieces
  • 1 large yellow onion diced
  • 2 lbs fresh green beans trimmed
  • 2 cups low-sodium chicken broth
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp apple cider vinegar

Method
 

  1. Cook the bacon in a large pot over medium heat for 7 minutes until browned but not brittle.
  2. Add the onion and cook in the bacon fat for 5 minutes until translucent.
  3. Stir in the green beans, broth, salt and pepper and bring to a simmer.
  4. Cover partly and cook for 35 to 40 minutes, stirring twice, until the beans are tender and the broth has reduced to a few spoonfuls.
  5. Stir in the vinegar and cook uncovered for 2 minutes before serving.
