Slow-Cooker Sausage, White Bean and Tomato Stew

Smoked sausage gives this pantry stew the flavor that usually takes an hour of sautéing. Kale goes in frozen and comes out tender, not swampy. Use low-sodium broth because the sausage and beans already bring plenty of salt to the cooker.

Ingredients
  

  • 14 oz fully cooked smoked sausage sliced 1/2 inch thick
  • 2 cans 15 oz each cannellini beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 8 oz frozen chopped kale
  • 3 cups low-sodium chicken broth
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Add the sausage, cannellini beans, crushed tomatoes and frozen kale to a 6-quart slow cooker.
  2. Pour in the broth and season with the salt and black pepper.
  3. Stir once, scraping the dense tomatoes away from the bottom of the crock.
  4. Cover and cook on low for 5 hours, until the kale is tender and the stew bubbles around the edge.
  5. Stir well and let the stew stand uncovered for 10 minutes before ladling it into bowls.
