Cook onion in oil in a skillet over medium heat for 6 minutes. Add garlic and paprika and stir for 30 seconds, then immediately add broth and tomato paste.
Pour the onion mixture into a 6-quart slow cooker. Add pork, bell peppers, salt and pepper and stir.
Cover and cook on low for about 6 hours until pork is fork-tender and reaches at least 145°F. Stir cornstarch mixed with cold water into the sauce and cook covered on high for 10 minutes.
Cook noodles in boiling water according to the package until just tender, about 8 to 10 minutes, then drain.
Turn off the cooker and let the sauce stop bubbling for 5 minutes. Whisk yogurt with 1/2 cup hot sauce added gradually, then stir it into the cooker without boiling again.
Divide noodles, pork and pepper sauce among 6 bowls.
