Slow-Cooker Honey Garlic Chicken and Green Beans

Most honey-garlic chicken turns candy-sweet. Equal parts soy and honey keep this one pointed in the right direction. Add the green beans near the end so they retain a little snap. There is enough sauce to coat, not drown, the chicken.

Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1/3 cup honey
  • 1/3 cup reduced-sodium soy sauce
  • 6 garlic cloves minced
  • 16 oz frozen whole green beans
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Arrange the chicken thighs in a 6-quart slow cooker and season them with the salt and black pepper.
  2. Whisk the honey, soy sauce and garlic together and pour the mixture evenly over the chicken.
  3. Cover and cook on low for 4 hours, until the chicken is nearly tender.
  4. Scatter the frozen green beans over the chicken, cover again and cook for 30 to 60 minutes, until the beans are hot and the chicken reaches 165°F.
  5. Turn the chicken through the sauce and let it rest uncovered for 5 minutes before serving.
