Method
- Arrange the cabbage wedges and apple pieces across the bottom of a 6-quart slow cooker.
- Season the pork with the salt and black pepper and set it over the cabbage.
- Whisk the cider and Dijon mustard together and pour the mixture over the pork.
- Cover and cook on low for 5 to 6 hours, until the pork reaches at least 145°F and is tender enough to cut with a fork.
- Lift out the pork and cabbage carefully, then spoon the cider juices and softened apples over each serving.
