Sloppy Joe Tater Tot Bake

Loose-meat sandwich filling becomes a fork dinner when crisp potatoes cover the pan. Vinegar and mustard keep the sauce savory enough for adults, and finely diced pepper disappears into the beef. Simmer until the filling holds a groove before adding the tots or the bottom row will go soggy.

Ingredients
  

  • 1 1/2 pounds 85% lean ground beef
  • 1 small yellow onion finely diced
  • 1 green bell pepper finely diced
  • 2 garlic cloves minced
  • 1 can tomato sauce 15 ounces
  • 1/3 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 3/4 teaspoon kosher salt
  • 1 bag frozen tater tots 28 ounces

Method
 

  1. Heat the oven to 400°F and grease a 9-by-13-inch dish.
  2. Brown the beef, onion and pepper in a large skillet, breaking the meat into fine crumbles. Drain excess fat and add the garlic for 30 seconds.
  3. Stir in tomato sauce, ketchup, vinegar, brown sugar, mustard, Worcestershire and salt. Simmer for 8 to 10 minutes until thick.
  4. Spread the filling in the dish and arrange the frozen tater tots in a single close layer.
  5. Bake for 35 to 40 minutes, until the potatoes are dark golden and the filling bubbles. Rest 10 minutes before serving.
