Sloppy Joe Cheeseburger Sliders

This thick beef filling lands between sloppy Joe and cheeseburger, with mustard, tomato and sharp cheddar stirred in at the end. Browning the meat first removes excess fat and keeps the slow cooker from producing gray beef. Spoon it into buns only when serving so the bottoms stay intact.

Ingredients
  

  • 2 lb lean ground beef
  • 1 small yellow onion finely chopped
  • 2 garlic cloves minced
  • 1 1/4 cups ketchup
  • 2 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp packed brown sugar
  • 1/2 tsp kosher salt
  • 1 1/2 cups shredded sharp cheddar
  • 20 slider buns
  • 1/2 cup chopped dill pickles

Method
 

  1. Brown the beef and onion in a skillet over medium-high heat until no pink remains; add the garlic for the final minute and drain well.
  2. Transfer the mixture to a 4-quart slow cooker and stir in ketchup, mustard, Worcestershire, brown sugar and salt.
  3. Cover and cook on low for 2 to 2 1/2 hours, stirring once.
  4. Switch to warm and stir in the cheddar until melted.
  5. Serve in slider buns with chopped pickles, assembling each sandwich just before eating.
