Sloppy Joe Biscuit Bake

Sloppy Joe filling under biscuits is exactly the sort of shortcut dinner the decade understood. Simmer the beef until a spoon leaves a clean trail, because thin filling steams the biscuits from below and gives them gummy bottoms.

Ingredients
  

  • 1 1/2 lbs 85% lean ground beef
  • 1 medium yellow onion chopped
  • 1 medium green bell pepper chopped
  • 1 can 15 oz tomato sauce
  • 1/3 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp kosher salt
  • 1 can 16 oz refrigerated biscuits
  • 1 cup shredded cheddar cheese

Method
 

  1. Heat the oven to 400°F and grease a 9-by-13-inch baking dish.
  2. Brown the beef, onion and bell pepper in a large skillet over medium-high heat for 8 to 10 minutes, until the beef reaches 160°F, then drain the fat.
  3. Stir in the tomato sauce, ketchup, brown sugar, mustard, Worcestershire and salt.
  4. Simmer uncovered for 8 to 10 minutes, until the filling is thick enough that a spoon leaves a trail across the skillet.
  5. Spread the hot filling in the dish, sprinkle it with cheddar and arrange the biscuits about 1 inch apart on top.
  6. Bake for 20 to 25 minutes, until the biscuits are deep golden and cooked through at their centers.
  7. Rest for 5 minutes before serving one biscuit with each scoop of beef.
