Skillet Fried Apples

Fried apples should have curved slices you can pick up with a fork, not applesauce under cinnamon syrup. Choose firm baking apples and cut them thick. They work beside pork chops, over biscuits or straight from a bowl while they're still warm.

Ingredients
  

  • 2 lbs firm baking apples peeled and sliced 1/2 inch thick
  • 4 tbsp unsalted butter
  • 1/3 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 2 tbsp apple cider
  • 1 tbsp fresh lemon juice

Method
 

  1. Melt the butter in a 12-inch skillet over medium heat until it foams.
  2. Add the apples and cook for 5 minutes, turning the slices once, until they begin to brown.
  3. Sprinkle in the brown sugar, cinnamon and salt and toss gently until the sugar melts.
  4. Add the cider, cover, and cook for 5 to 7 minutes until the apples are tender but still hold their curved shape.
  5. Stir in the lemon juice and cook uncovered for 1 minute until the syrup clings to the slices.
