Sheet Pan Shrimp Boil

The name is shrimp boil, but the oven handles the potatoes, corn and sausage before the shrimp make their brief appearance. Cut the potatoes small and give them a real head start. Shrimp should be the last protein on the pan. They need only enough time to turn opaque, while the corn gets a little color along its cut edges and the sausage leaves smoky drippings for the lemon butter. Use peeled shrimp if you want dinner to be less of a project at the table.

Ingredients
  

  • 3/4 lb baby potatoes cut into 3/4-inch pieces
  • 2 ears corn husked and cut into 1-inch rounds
  • 6 oz fully cooked andouille sausage cut into 1/2-inch rounds
  • 1 lb raw peeled deveined large shrimp tails removed
  • 2 tbsp olive oil divided
  • 2 tbsp unsalted butter softened
  • 2 tbsp fresh lemon juice
  • 1 tsp sweet paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp celery salt
  • 1/4 tsp cayenne
  • 1/4 tsp black pepper
  • 1/4 tsp fine salt

Method
 

  1. Heat the oven to 425°F and line an 18-by-13-inch rimmed sheet pan with foil. Toss potatoes with 1 tablespoon oil and the fine salt, spread cut-side down and roast for 20 minutes.
  2. Mix paprika, garlic powder, celery salt, cayenne and pepper in a small bowl. Toss corn and andouille with remaining oil and half the spice mixture.
  3. Turn potatoes and add corn and sausage to the pan. Roast for 12 minutes, keeping the pieces in one layer.
  4. Pat shrimp dry and toss with the remaining spice mixture. Add to the pan, dot everything with softened butter and roast for 7 to 9 minutes until shrimp are opaque and reach 145°F and potatoes are tender.
  5. Drizzle with lemon juice and turn everything gently through the pan juices. Divide potatoes, corn, sausage and shrimp among 4 plates.
