Sheet-Pan Parmesan Cod, Asparagus and Potatoes

The potatoes get a head start because cod refuses to wait around for them. After that, everything finishes on the same sheet under a salty Parmesan crust. Pull the fish as soon as it flakes in thick pieces; five extra minutes is the difference between juicy and chalky.

Ingredients
  

  • 1 1/2 lbs baby gold potatoes quartered
  • 4 cod fillets 6 oz each
  • 1 lb asparagus trimmed
  • 3/4 cup finely grated Parmesan cheese
  • 3 tbsp olive oil
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Heat the oven to 425°F and line a large rimmed sheet pan with parchment paper.
  2. Toss the potatoes with 1 1/2 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper, then arrange them cut-side down.
  3. Roast the potatoes for 20 minutes, until their bottoms begin to brown.
  4. Turn the potatoes, add the cod and asparagus, and coat both with the remaining olive oil, salt and black pepper.
  5. Press the Parmesan over the tops of the cod fillets and scatter any remainder over the asparagus.
  6. Roast for 12 to 15 minutes more, until the cod flakes and reaches 145°F and the asparagus is tender.
