Sheet-Pan Mini Meatloaves and Green Beans

Small meatloaves fix the two worst things about the full-size version: a long wait and pale sides. Stuffing mix seasons and binds the beef without extra jars; shape the patties evenly, because a thick middle ruins the timing.

Ingredients
  

  • 1 1/2 lbs 85% lean ground beef
  • 1 box 6 oz seasoned stuffing mix, finely crushed
  • 2 large eggs
  • 1/2 cup ketchup
  • 1 lb fresh green beans trimmed
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Heat the oven to 400°F and line a large rimmed sheet pan with parchment paper.
  2. Mix the beef, stuffing mix, eggs, 1/4 teaspoon salt, 1/4 teaspoon black pepper and 1/4 cup ketchup just until combined.
  3. Shape the mixture into 6 oval patties about 1 inch thick and arrange them on one half of the pan.
  4. Spread the green beans on the other half of the pan and season them with the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  5. Brush the remaining 1/4 cup ketchup over the meatloaves.
  6. Roast for 24 to 28 minutes, turning the beans once, until the meatloaves reach 160°F and the beans blister.
