Sheet-Pan Kielbasa, Cabbage and Apples

Cabbage is cheap, sturdy and far better after its thin edges char. Kielbasa supplies the smoke and fat. Apples soften into tart breaks between bites. Keep the mustard in small streaks so each forkful isn't identical.

Ingredients
  

  • 14 oz fully cooked kielbasa sliced 1/2 inch thick
  • 1 small green cabbage cored and cut into 1-inch pieces
  • 2 crisp apples cored and cut into 8 wedges each
  • 1/4 cup whole-grain mustard
  • 3 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Heat the oven to 425°F and line a large rimmed sheet pan with parchment paper.
  2. Toss the cabbage and apples with the olive oil, salt and black pepper directly on the pan.
  3. Add the kielbasa and spread the mixture into one layer with some cabbage edges exposed.
  4. Dot the whole-grain mustard in small spoonfuls across the sausage and cabbage.
  5. Roast for 15 minutes, turn everything, and roast for 12 to 15 minutes more, until the cabbage edges char and the apples are tender.
