Scratch Vanilla Syrup Latte

Vanilla syrup is the second made-from-scratch base, built from equal amounts sugar and water so it measures cleanly into hot or iced drinks. Add vanilla off the heat to preserve its aroma. Two tablespoons sweeten a latte noticeably; use one tablespoon when the coffee itself has caramel or chocolate notes.

Ingredients
  

  • 1 cup granulated sugar
  • 1 cup water
  • 1 tbsp vanilla extract
  • 16 shots espresso or 2 2/3 cups strong coffee
  • 6 cups milk

Method
 

  1. Combine sugar and water in a small saucepan and simmer for 4 minutes until completely clear.
  2. Remove from heat, stir in vanilla and cool the syrup; refrigerate it in a clean covered jar.
  3. For each latte, stir 2 tablespoons syrup into 2 hot espresso shots.
  4. Heat 3/4 cup milk to about 150°F and froth briefly.
  5. Pour the milk into the sweetened coffee and spoon the light foam over the top.
