Scratch Caramel Macchiato

The third scratch syrup is a simple wet caramel loosened with water, giving this layered drink deeper cooked-sugar flavor than plain brown syrup. Vanilla sweetens the milk while caramel marks the top. Pour espresso through the foam just before serving so the cup keeps visible milk, coffee and caramel zones.

Ingredients
  

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup hot water
  • 1/4 tsp kosher salt
  • 1 tsp vanilla extract
  • 6 cups milk
  • 16 shots espresso or 2 2/3 cups strong coffee

Method
 

  1. Cook sugar and 1/4 cup water in a saucepan without stirring until the syrup turns medium amber.
  2. Remove from heat and carefully whisk in 1/2 cup hot water, then salt; cool and refrigerate.
  3. For each drink, stir 1 teaspoon vanilla into 3/4 cup hot frothed milk in a tall mug.
  4. Slowly pour 2 espresso shots through the foam.
  5. Drizzle 1 tablespoon caramel syrup over the top and serve without fully stirring the layers.
