Savoury Mince on Toast

Tiny carrot dice make the timing work. Big chunks won't soften while the gravy thickens. This is a spoonable beef-and-vegetable supper, with Worcestershire and tomato paste doing the seasoning rather than a packet of brown gravy mix. Toast the bread properly so it supports the filling. Soft bread straight from the bag disappears under the first ladleful.

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb 90% lean ground beef
  • 1 small onion finely diced
  • 1 medium carrot cut into 1/4-inch dice
  • 1 tbsp tomato paste
  • 1 tbsp all-purpose flour
  • 1 1/2 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup frozen peas
  • 8 slices sturdy whole-wheat bread
  • 2 tbsp unsalted butter

Method
 

  1. Heat the oil in a large skillet over medium-high heat. Cook the beef, onion and carrot for 7 to 8 minutes, breaking up the beef and cooking it to 160°F.
  2. Stir in tomato paste and flour for 1 minute. Gradually stir in broth, then add Worcestershire, thyme, salt and pepper.
  3. Simmer over medium heat for 6 to 8 minutes, stirring occasionally, until the carrots are tender and the gravy coats the beef.
  4. Add the frozen peas and cook for 2 minutes until hot. Toast the bread while the gravy finishes, then spread with butter.
  5. Put two toast slices on each plate and spoon the mince over them just before serving.
