Sausage Potato Breakfast Burrito

A breakfast burrito is a sandwich with better engineering. Dice the potatoes small so they cook through before the sausage dries out, then cool the filling for two minutes before rolling. That pause keeps steam from tearing the tortilla.

Ingredients
  

  • 12 oz breakfast sausage
  • 2 cups peeled russet potato cut into 1/2-inch cubes
  • 1 tbsp neutral oil
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas

Method
 

  1. Cook the sausage in a skillet over medium heat for 7 minutes, breaking it apart, until browned and 160°F, then transfer it to a bowl.
  2. Add the oil and potatoes, season with salt and black pepper, cover and cook for 8 minutes.
  3. Uncover and cook the potatoes for 5 more minutes until tender with crisp brown edges.
  4. Add the eggs and stir for 3 minutes until set to 160°F, then fold in the sausage.
  5. Cool the filling for 2 minutes and divide it among the tortillas with the cheddar.
  6. Fold in the sides, roll tightly and toast seam-side down for 2 minutes.
