Sausage Gravy Biscuit Stack

This is the messy one, but the gravy should cling rather than pour. Build it with a split biscuit, a thin sausage patty and one spoonful of pepper gravy under the top. More gravy belongs in a bowl, not in your lap.

Ingredients
  

  • 1 lb breakfast sausage divided
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 4 large baked biscuits split

Method
 

  1. Form 12 ounces sausage into four thin patties and crumble the remaining 4 ounces.
  2. Cook the patties in a skillet over medium heat for 4 minutes per side until 160°F, then transfer them to a rack.
  3. Cook the crumbled sausage for 3 minutes until browned and 160°F.
  4. Sprinkle in the flour and stir for 1 minute until no dry patches remain.
  5. Whisk in the milk, salt and black pepper and simmer for 4 to 5 minutes until the gravy coats a spoon.
  6. Fill each biscuit with one patty and 1/4 cup thick sausage gravy.
