Sausage Egg American Breakfast Melt

Breakfast sausage is pressed into thin bread-size patties so it cooks safely without creating a baseball at the center of the sandwich. American cheese melts around sausage and a folded egg, while white toast keeps the whole thing diner-direct. Check sausage for 160°F before assembly.

Ingredients
  

  • 8 oz bulk breakfast sausage
  • 4 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 slices white sandwich bread
  • 4 slices American cheese
  • 2 tbsp unsalted butter

Method
 

  1. Shape the sausage into two broad thin square patties and cook in cast iron over medium heat for 4 to 5 minutes per side to 160°F.
  2. Whisk the eggs with salt and pepper and cook as two thin folded rectangles.
  3. Layer American cheese, sausage, egg and more cheese between bread slices.
  4. Butter the outside faces and griddle over medium-low heat for 3 minutes per side until golden and melted.
  5. Rest briefly and cut.
