Salted Caramel Cold Foam Cold Brew

Cold foam is milk aerated while cold, not whipped cream. A small amount of cream helps this salted caramel version hold for several minutes while still pouring. Froth it in a narrow jar so the whisk remains submerged, then spoon it over cold brew; salt belongs in the foam, where each sip meets it first.

Ingredients
  

  • 1/2 cup cold-brew concentrate
  • 1/4 cup cold water
  • 1 cup ice
  • 1/4 cup cold whole milk
  • 2 tbsp cold heavy cream
  • 1 tbsp scratch caramel syrup from recipe 7
  • Small pinch of flaky salt

Method
 

  1. Combine cold brew and water in a tall glass filled with ice.
  2. Put milk, cream, caramel syrup and salt in a narrow cold jar.
  3. Froth for 30 to 45 seconds until thickened into a pourable fine-bubbled foam.
  4. Spoon and pour the foam over the cold brew and serve without stirring.
