Heat the oven to 400°F and coat a 9-by-13-inch baking dish with cooking spray.
Spread the rinsed long-grain rice in the dish and add the chicken, black beans, salsa, broth, corn and salt.
Stir evenly, press the rice below the liquid and cover the dish tightly with foil.
Bake for 45 minutes without lifting the foil, then test that the chicken reaches 165°F and the rice has no chalky core.
Add 2 tablespoons hot broth, reseal and bake for 5 to 10 minutes if the rice is still firm.
Scatter on the Monterey Jack, bake uncovered for 3 minutes and rest for 10 minutes before fluffing.
