Roast Beef Horseradish Club

Cold roast beef can carry a club when the spread has some bite. Horseradish mayonnaise, cheddar, tomato and peppery arugula keep the three layers distinct. Buy ready-to-eat beef sliced thin; thick slabs pull the sandwich apart when you bite.

Ingredients
  

  • 12 slices marbled rye bread
  • 12 oz thinly sliced ready-to-eat roast beef
  • 8 slices sharp cheddar cheese
  • 2 cups baby arugula
  • 1 large tomato cut into 8 slices
  • 1/3 cup mayonnaise
  • 2 tbsp prepared horseradish
  • 1/2 tsp coarse black pepper

Method
 

  1. Toast the rye until crisp, then cool it completely on a wire rack.
  2. Stir the mayonnaise, horseradish and black pepper together and spread it over one side of each toast slice.
  3. Layer 4 toast slices with half the roast beef, 4 cheddar slices and half the arugula.
  4. Add the middle toast slices spread-side up, then layer on the remaining beef, cheddar, arugula and tomato.
  5. Close with the final toast slices, secure each club with 4 picks and press only hard enough to steady it.
  6. Cut each sandwich into 4 triangles with a serrated knife.
