Reser's Main St Bistro-Inspired Baked Mac

Ingredients
  

  • 1 lb elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1 can 12 oz evaporated milk
  • 2 cups whole milk
  • 2 cups shredded mild cheddar
  • 2 cups shredded sharp cheddar divided
  • 1/2 cup finely grated Parmesan
  • 1 tsp kosher salt

Method
 

  1. Heat the oven to 375°F and boil macaroni until tender; drain.
  2. Melt butter, whisk in flour for 1 minute and gradually add evaporated milk and whole milk.
  3. Simmer until lightly thickened, remove from heat and melt in mild cheddar, 1 cup sharp cheddar, Parmesan and salt.
  4. Fold in macaroni and spread in a buttered baking dish, topping with remaining sharp cheddar.
  5. Bake for 22 to 26 minutes until the top and edges are browned and the center bubbles.
